The Prophet of Mercy is mentioned in Sacrifice, the short story originally included in Halo: Shadows of Reach. As Sacrifice was originally part of Halo: Shadows of Reach, anything mentioned in it is, by extension, also mentioned in Halo: Shadows of Reach. However, the confusion is understandable given that Mercy isn't mentioned within the main text of Halo: Shadows of Reach itself. We're looking into ways to avoid this kind of confusion.
I read it when it released in 2020 - it's been six years, and I'm currently at work so I can't crack it out and reference it this second.
If you're simply unsure of whether the character appears in the book, then it's generally preferred you do not edit until such a time as you can verify that the information you are trying to contribute is accurate. Mercy could appear in a flashback, or he could simply be mentioned-only - either way, simply removing information from a page without any kind of explanation or justification is generally construed as vandalism (especially so given you've already tried to add information to pages with no sources at all).
That is not, and never has been, now we do galleries on this site. We don't include as many images in the Master Chief gallery because there's already far too many images in it as-is. A skin in another game is a perfectly acceptable inclusion in an article gallery, unless it's taking up space that would be better reserved for other and more important images. The Joyeuse gallery is not especially crowded, so at this time, it's fine.
It's a picture of that character.
