Is this picture considered Canon? The Grav-Bay looks considerably different (obviously) but also somewhat larger. Being able to fit not one but 2 phantoms and what appears to be hundreds of infantry soldiers. Is this considered canon?

Yes, this is to be considered canon. Granted, there are some changes, but keep in mind there is more than one hangar bay on board a CCS-class Battlecruiser.
